This style developed in east Belgium, where barley, wheat and oats were grown and plentiful. The pale malts used, in addition to the wheat and oats, resulted in a very pale and cloudy beer. Wit is Flemish for “white” and though the beer is not actually white, it was pretty dang pale compared to many other beers of the time. Typically made with orange peel and coriander; we used the zest of Gold Nugget mandarins and Grains of Paradise (seeds of a plant in the ginger family with a peppery flavor and hint of citrus).
