Fruity Belgian with that replaces the traditional orange zest with passion fruit puree.
Brewed for hundreds of years, the Belgian White ale was almost extinct when a milkman, with an apparent affinity for very pale beverages, revived the style in the 1960s. Belgian Wits (white) Ales are made with pale malts and a large portion of unmalted wheat, which gives it a very pale color and cloudiness, hence the “white.” Traditionally made with orange peel and coriander; we used coriander but substituted PASSION FRUIT for the orange. Adding fruit pre-fermentation will allow the yeast to eat most of the sugar in the juice during fermentation, resulting in much fruitiness without all the sweetness. This wit is dry and very refreshing.
