The rains that fell to earth 3000 years ago are filtered very slowly through hundreds of feet of fine grain sand, culminating in a huge underground lake filled with 57 trillion gallons of virtually mineral-free water. With this prestigious water reserve, we supply Memphis with Sands, our one-of-a-kind Lager. Beauteous in its simplicity, it is very low in bitterness and full of delicious flavors of bread and cracker-y malt.

The Alsace region of France grows a distinctive hop called Strisselspalt, and this unique hop variety is used heavily in the brewing process of this slammable lager. This French-leaning Meyer Lemon and Exceptional Black Tea flavored lager is slightly sweet from a brewhouse lactose addition. Jean DeLis (which translates to John “of flowers”) will outdrive any longball competition and make out on the 19th green while streakers run wild in ecstasy.

Unicornucopia is our “Grand Cru” (a special beer we make every year for our beer fest, Taste the Rarity; the recipe changes every year). Festbier is the lower ABV and lighter colored cousin of Marzen. But this one is special. Uni ’25 was dragged through the garden in France. We got a hold of a bunch of Chardonnay barrels, filled them with festbier, and then aged them in our “cave” over the winter. What resulted is a lovely balance of malt, fruity white wine, zippy lemon, toasty oak, and crispy cracker. Round mouthfeel and subtle grape notes accentuate the finish. This is one of the lowest ABVs we have clocked on Unicornucopia, perfect for a strong sipping spring session. This unfiltered beer came out brilliantly clear, and the lovely light amber hue looks great topped with white foam. Prost!

This is an elegant stunner of a beer, but there is certainly no reason to fuss over it. The lower alcohol and bready malt make this one an easy drinker.

Our cold brew coffee project has been years in the making. Our friends at Metropolis Coffee have helped us through every step. It is well known that we are fans of coffee and other caffeinated beverages and this cold brew coffee is certainly another way for us to get up in addition to getting down. We are using a blend of coffees with particular attention being paid to Central and South American varieties. The end result is a slightly tart, refreshing brew with plenty of roast and a peanut buttery finish. This coffee is brewed using a cold method of extraction which produces a smoothness quite different from hot brewing methods. The bitterness normally associated with coffee is almost completely absent. There is however, plenty of caffeine. It may not be a good idea to drink more than one of these. This brew can be enjoyed straight from the can, but it is best poured over ice to maximize refreshment.
Zip Zero Nada when it comes to alcohol, sugar, and calories, but not when it comes to flavor! Hydrating and refreshing, Hop Zip is charged with Mosaic hops’ resin and tropical fruit notes plus a flavor spritz of natural lime, reminding your palette of a balance between delightful hop flavors and aromas, all wrapped up in a tasty, flavorful sparkling water. What exactly is hop water? This new category is beer adjacent, as it features an ingredient that is unique to breweries (hops) but is closer to hop tea or sparkling water. Hop Zip is non-alcoholic with zero carbs and zero sugars but retains the therapeutic qualities of hops. For ours, we chose Mosaic hops, which create amazing tropical and melon flavors/aromas in beer. An all-cold extraction process led to some different expressions of Mosaic hops.

The Alsace region of France grows a distinctive hop called Strisselspalt, and this unique hop variety is used heavily in the brewing process of this slammable lager. This French-leaning Meyer Lemon and Exceptional Black Tea flavored lager is slightly sweet from a brewhouse lactose addition. Jean DeLis (which translates to John “of flowers”) will outdrive any longball competition and make out on the 19th green while streakers run wild in ecstasy.

Unicornucopia is our “Grand Cru” (a special beer we make every year for our beer fest, Taste the Rarity; the recipe changes every year). Festbier is the lower ABV and lighter colored cousin of Marzen. But this one is special. Uni ’25 was dragged through the garden in France. We got a hold of a bunch of Chardonnay barrels, filled them with festbier, and then aged them in our “cave” over the winter. What resulted is a lovely balance of malt, fruity white wine, zippy lemon, toasty oak, and crispy cracker. Round mouthfeel and subtle grape notes accentuate the finish. This is one of the lowest ABVs we have clocked on Unicornucopia, perfect for a strong sipping spring session. This unfiltered beer came out brilliantly clear, and the lovely light amber hue looks great topped with white foam. Prost!
The first golden lagers ever produced were a product of the Czech Republic. Our Czech 10° lager is like a pilsner in many ways, but still something else. We start with floor malted Moravian barley and an experimental lager hop, YCH’s 1134, and there you have the building blocks of a Czech light lager. We added some other fascinating methods including a 3 hour boil (for clean bitterness) as well as an exceedingly lengthy 6 week conditioning time. This makes a smoothness and hearty body in the beer that is the perfect complement to the snappy, herbal finish provided by the hops. This is an elegant stunner of a beer, but there is certainly no reason to fuss over it. The lower alcohol and bready malt make this one an easy drinker.
Malted and flaked wheat is used to bring body to this classic ale. A downright wasteful amount of Cascade and Centennial hops are used to give this beer its aromas of grapefruit rind, mango, and melon. Hoppy, pale, and quaffable.

Beauteous in its simplicity, it is very low in bitterness and full of delicious flavors of bread and cracker-y malt.
Magical natural process beans from the Konga region of Ethiopia lead the way in this intense coffee stout. This rare variety of coffee leads to aromas of sweet roastiness and blueberry pie flavors. Lactose, or milk sugar, is added along with oats for a silky medium body and a lush finish. Red Bull and vodka done the long way. For old men, not teenagers.

On a magical trip to Japan, WISEACRE’s brewer and founder fell further in love with the country and the customs he had often admired from afar. Food, communication, architecture, and even beer operate on different wavelengths in different countries and there is much to be learned and admired. It is out of the Japanese tradition of dry rice lager that birthed WISEACRE’s IRUSU. Succumb to gentle rice, smooth taste, and a dry, palate-cleansing finish to this beer which found its inspiration on the other side of the globe including the Ukiyo-e woodblock art influencing this label.

Our cold brew coffee project has been years in the making. Our friends at Metropolis Coffee have helped us through every step. It is well known that we are fans of coffee and other caffeinated beverages and this cold brew coffee is certainly another way for us to get up in addition to getting down. We are using a blend of coffees with particular attention being paid to Central and South American varieties. The end result is a slightly tart, refreshing brew with plenty of roast and a peanut buttery finish. This coffee is brewed using a cold method of extraction which produces a smoothness quite different from hot brewing methods. The bitterness normally associated with coffee is almost completely absent. There is however, plenty of caffeine. It may not be a good idea to drink more than one of these. This brew can be enjoyed straight from the can, but it is best poured over ice to maximize refreshment.
